• Amuse bouche
• Smoked potato mousse with chorizo and lemon
• Bread with duo of butter, brioche with homemade quark and pickled pumpkin
• Ticino-style Swiss beef tartare with bacon ice-cream served with olive cream and parmesan crisp
• Carrot-orange cream soup with carrot crisp, orange fillets and chervil
• Pumpkin risotto with grilled goat's cheese from Dallenwil with sage oil and fresh sage
• Deconstructed Beef Wellington - Fillet mignon with mushroom cream Grand Marnier sauce served with a potato-herb mousse and puff pastry
